This Keto Cheesy Sausage and Broccoli Casserole is a delicious and easy way to enjoy a comforting casserole while staying on track with your keto diet. Sauteed sausage and broccoli florets are bathed in a rich and creamy cheese sauce, then baked to golden perfection. It's a complete meal in one dish, perfect for busy weeknights or weekend potlucks.
Casseroles are a classic comfort food, but traditional versions can be high in carbs. This keto-friendly casserole swaps out starchy ingredients like pasta or rice for broccoli, making it a great option for those following a low-carb lifestyle. Plus, it's packed with protein and healthy fats from the sausage and cheese, keeping you feeling satisfied all night long.

Ingredients

Directions

  1. Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish.
  2. In a large skillet, heat olive oil over medium heat. Add sausage and cook until browned, breaking it up with a spoon as it cooks. Drain any excess grease.
  3. Add onion to the skillet and cook until softened, about 5 minutes. Stir in garlic and cook for an additional minute.
  4. In a large bowl, combine cream cheese, cheddar cheese, Parmesan cheese, heavy cream, eggs, thyme, salt, and pepper. Stir until smooth.
  5. Add cooked sausage, onion, and broccoli to the cheese mixture and stir to combine.
  6. Pour mixture into the prepared baking dish.
  7. Bake for 25-30 minutes, or until the casserole is bubbly and the top is golden brown.
  8. Let cool slightly before serving.
  9. Tips:
  10. For a spicier casserole, add a pinch of red pepper flakes to the cheese sauce.
  11. If you don't have frozen chopped broccoli, you can use fresh broccoli florets. Just steam or blanch them for a few minutes before adding them to the casserole.
  12. Leftovers can be stored in the refrigerator for up to 3 days. Reheat in the microwave or oven until heated through.
