- In a mixing bowl, combine the gram flour, yogurt, ginger paste, green chili paste, turmeric powder, red chili powder, asafoetida, baking soda, and salt.
- Add the water and whisk until the batter is smooth.
- Grease a steamer with oil and line it with greaseproof paper.
- Pour the batter into the steamer and steam for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Let the Dhokla cool completely before cutting it into squares.
- To serve, heat 1 tablespoon of oil in a pan. Add the mustard seeds and let them splutter. Add the curry leaves and green chilies and fry for a few seconds.
- Pour the tempering over the Dhokla and serve hot with chutney.
- Tips:
- For a softer Dhokla, add a little more water to the batter.
- You can use any type of yogurt you like.
- If you don't have a steamer, you can cook the Dhokla in a pressure cooker. Just add 1 cup of water to the pressure cooker and steam the Dhokla for 10 minutes on high pressure.
- You can serve Dhokla with any type of chutney you like. Some popular chutneys are mint chutney, tamarind chutney, and garlic chutney.
