- In a large bowl, combine the mashed potatoes, paneer, green peas, cashews, ginger-garlic paste, garam masala powder, red chili powder, 1 teaspoon kasoori methi , turmeric powder, and salt. Mix well until everything is combined.
- Form the mixture into small balls and then flatten them slightly.
- Coat each Kofta in all-purpose flour.
- Heat oil in a deep pan and deep fry the koftas until they are golden brown. Drain on paper towels.
- To make the Gravy:
- Heat ghee in a pan and add the cashew paste. Fry for a few seconds until fragrant.
- Add the onion, ginger, garlic, and green chili. Sauté until the onion is golden brown.
- Add the cumin seeds, coriander powder, turmeric powder, red chili powder, and garam masala powder. Fry for a few seconds until fragrant.
- Add the tomato puree and cook until the oil separates.
- Add the milk and cream and bring to a boil.
- Reduce the heat and simmer for 5 minutes, or until the gravy thickens.
- Add the fried koftas to the gravy and cook for a few more minutes, or until heated through.
- Garnish with fresh cream and serve hot with naan or rice.
