  1. Prepare the tamarind:Soak the tamarind ball in water for 15 minutes. Squeeze the tamarind ball to extract the juice.
  2. Cook the lentils:Rinse the toor dal and add it to a pressure cooker with 3 cups of water. Cook for 3 whistles or until the lentils are soft.
  3. Saute the vegetables:Heat oil in a pan. Add mustard seeds, fenugreek seeds, and curry leaves. When they splutter, add onions and saute until golden brown. Add tomatoes and cook until soft.
  4. Add the spices:Add sambar masala, turmeric powder, red chili powder, cumin powder, and coriander powder. Cook for 1 minute.
  5. Combine the ingredients: Add the cooked lentils, tamarind juice, and salt to the pan. Stir well. Add water as needed to adjust the consistency.
  6. Simmer: Simmer the sambar for 5-10 minutes, or until the flavors have blended.
  7. Temper: Heat oil in a small pan. Add mustard seeds, fenugreek seeds, and curry leaves. Pour this tempering over the sambar.
  8. Serve:Serve hot with rice, idli, or dosa.
