  1. Heat the ghee or oil in a pan over medium heat.
  2. Add the mustard seeds, cumin seeds, and dried red chili. Allow them to splutter.
  3. Add the chopped onion, green chili, carrots, and peas. Sauté until softened.
  4. Add the semolina and stir continuously. Roast the semolina until it turns slightly brown.
  5. Add the water and salt. Stir well to combine.
  6. Cover the pan and cook for 10-15 minutes, or until the water is absorbed and the Upma is fluffy.
  7. Fluff the Upma with a fork and serve hot.
