Ingredients

Directions

  1. Marinate the Chicken (Optional): In a large bowl, combine chicken pieces with 1 tbsp soy sauce, 1 tbsp pineapple juice, and a pinch of black pepper. Marinate for 30 minutes, then drain, reserving the marinade.
  2. Sauté the Aromatics: Heat oil in a large pot or Dutch oven over medium heat. Add the onions and garlic, and cook until softened and fragrant, about 3 minutes.
  3. Brown the Chicken: Add the chicken pieces and cook until browned on all sides, about 5-7 minutes per side. Remove the chicken from the pot and set aside.
  4. Simmer the Sauce: Pour in the tomato sauce and water. Bring to a boil, then reduce heat and simmer for 10 minutes.
  5. Add Vegetables and Seasonings: Add the potatoes, carrots, and chili peppers (if using) to the pot. Season with salt, pepper, and the Knorr chicken cube (or substitute). Cover and simmer for 15 minutes, or until the potatoes and carrots are almost tender.
  6. Finish the Stew: Return the chicken pieces to the pot along with the reserved marinade (if using) and liver spread. Stir to combine and simmer for an additional 10 minutes, or until the chicken is cooked through.
  7. Serve: Stir in the bell peppers and grated cheese (if using) and cook for an additional minute. Serve hot with steamed rice.
