  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the edamame pasta and cook according to package instructions until al dente. Reserve about 1/2 cup of the pasta water before draining.
  2. Make the Sauce: While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the diced onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Combine and Simmer: Pour in the vegetable broth, heavy cream, Parmesan cheese, lemon juice, and lemon zest. Bring to a simmer and cook for 5 minutes, stirring occasionally, until the sauce thickens slightly. Season with salt and freshly ground black pepper to taste.
  4. Assemble and Serve: Toss the cooked pasta, reserved pasta water, edamame, and creamy lemon sauce together in a large bowl until well combined. Garnish with fresh parsley and serve immediately.
